The particular cuisine of Pacific Vanuatu
The gastronomy of Vanuatu is quite interesting given the country's relationship with the rest of the world. It's overall deeply traditional, almost always using ingredients grown locally. Trying local delicacies is one of the main attractions in visiting such an oft-overlooked destination. Expect sweet vegetable dishes using banana, pineapple, yams, or taro, flavoured with coconut milk. Fish dishes include swordfish, coral trout, and skipjack tuna.
Yet this is also one of the Pacific island nations with the strongest ties to the outside world, which has led to an international flair developing in Vanuatu cuisine. And in Port Vila, you'll even find French and Chinese restaurants.
